I couldn't find anything about it in the help, but it looks like there is no way (within DPlot!) to change the label of a data set(s) in a OneD plot after it is created.
You can cheat by saving the file and directly editing the grf file, so would this be something easy enough to add to the program, to be able to do it within DPlot?

It's there, but probably misplaced... certainly not intuitive, anyway.

My fault for putting that in a goofy place... or rather, only in that one goofy place. I'll add a right-click gizmo and another menu command.
