I noticed when i have zoomed to an area on the graph, the zoom back is not enabled.
So I use control Z to get back to my original image. I then loose my changes.
Another instance is the original chart will so dead (blank area) to the right and left of the original plot. How do I get the image refreshed to the original?

I also noticed that my date range changed, which what is causing the chart offsets.
I can't seem to get the date range to stay withing what I specify in the extents/intervals size.
What to do ?

That shouldn't be. Exactly what are you doing to zoom in? (there are several methods).
I can't seem to get the date range to stay withing what I specify in the extents/intervals size.
What to do ?
The extents will generally be a multiple of the tick mark interval. If you did not set the interval (using that same dialog), then the interval is one that DPlot thinks is good, and that takes precedence over the extents.

I use the Zoom Icon from the Menu bar and drag a box around the target.
The first few times the Zoom back is there. And then when I try a few more times it becomes grayed out and I can't return to my original plot

That should only happen if you Zoom in, then use Extents/Intervals/Size to set the extents.
