After creating a derivitive curve and hiding the original, I need to re-scale the plot as the derivitive is musch 'smaller'
I'm sure it's there but how can I adjust the x and y scales to 'properly' display the new curve?

Select Extents/Intervals/Size on the Options menu, check "Specify extents", and enter whatever values you want.
Or
Unhide your curve. Select Options>General and check the "Recalculate extents of XY plots after hiding/unhiding curves". Hide your curve again, and DPlot will automatically adjust the extents.
